My husband loves to garden and normally plants a large garden or two. But our new house has a limited yard, so this year he planted a square box garden and a small section of hay bales for the tomato plants.
The boys have been so excited watching our square box garden grow.
Now both the square garden and the hay bale plants are producing some wondeful fresh vegetables and it’s time to find simple ways to cook them when they have been freshly picked.
The first vegetables that we picked were zucchini, lettuce, yellow squash, tomatoes and peppers (jalepeno and banana). Here are some simple recipes that we used for our “first fruits”:
